  1. Faith, a joy to see these magnificent specialties we shared for our November birthdays at Estia! I concur with all your superlatives, and add that both times now, the service has, if possible, equaled the cuisine. I don’t use a French word usually for Greek food, but no other will do! These family recipes are subtle, and their attention to detail shines through in everything, even those appetizers — which can be ‘muddy’ in other places. Scintillating here. Smooth. Flavorful. And all the different treatments of eggplant are different. I’ll take that journey any time anyone wants to return to Estia. The white wine we had has the evocative name of Atlantis, and it’s just right — fresh, clear, somewhat complex, not overpowering, not fruity, and not, for heaven’s sake, thin old Pinot Grigio, thanks to our headwater’s superb descriptions and explanations throughout. Thanks for bringing it all back!
