Oysters on cheese gritsThis should have been barbecued shrimp on cheese grits. But oysters is what I had in the fridge, so oysters is what I cooked for dinner recently.

For some reason I had a hankering for grits, too, and decided to use up a knob of cheddar cheese I had, so I ended up with cornmeal crusted oysters on cheese grits for dinner.

I buy the plastic tubs of shucked oysters at McCaffrey’s, they are delicious at around $6.  The size varies, these were fairly small, so they cooked up quickly in a little butter and grapeseed oil, after a dusting of cornmeal.  Delish!
