My little secret – I’ll never live this down! This onion soup is, believe it or not Campbell’s. No, not the heavily salted condensed kind, although I hear they’ve cut back on the salt in those. But this is part of the Campbell’s Select Harvest line, in a larger can. I “enhance” it with brandy and heat it up in a saucepan or microwave. Then I put the heated soup in a broiler-safe bowl, float a toasted crouton on top with a drizzle of EVOO, and lay on a slice of cheese (somthing “Swissy”).
I briefly broil it (in the toaster oven usually), and voilà!
