I first had this salad (already picked over here, sorry!) at T.G.I. Friday’s in the good ol’ days when I didn’t worry too much about what I ate. As I remember, it was made with spicy crunchy chicken tenders, romaine lettuce, tomato, cheddar, red onion, hard boiled egg, and honey-mustard dressing. It may have had croutons, too.
Eventually, I stopped going to TGI Friday’s (the noise, the salt, the processed food, what can I say?), but once in a while I would make my own version of the salad at home.
By now it’s been so long I can’t tell how close this is to what I used to enjoy, but judging from a very similar salad, called “The Jessica,” on the menu of Confectionately Yours, up Route 27 I’d say close (theirs has bacon, too!). One of these days I’ll try the Confectionately Yours rendition, but when I saw chicken tenders at Trader Joe’s not too long ago, I gave them a try. I always dust them with cayenne before I reheat them, then cut them up before putting them on the salad.
