Back in July, I posted on hand pies, those little pillows of dough folded over a sweet filling. (Of course, you could make a savory version instead.) These were the ones I made, with a little dark chocolate and orange marmalade inside. Heaven on earth.
Well, I guess hand pies are having their moment because I notice two of our local pastry queens, Nicole Bergman of Simply Nic’s Artisanal Shortbread and Jen Carson of Jen’s Cakes and Pastries, who together comprise 2 Moms & A Mixer, are including hand pies in their October 21 class at the West Windsor Adult School:

Make a simple homemade all-butter pie crust and use it 3 ways: in a traditional 9-inch fruit pie, a rustic free form tart and hand pies. Students will prepare the 3 types of pies and bring home a piping hot, delicious homemade treat with locally-sourced fruit.
