A group of Princeton businesses is cooking up a little fun for the month of March. They are planning Eat More Kale Princeton!-a month-long, town-wide celebration to highlight the culinary and health benefits of kale and to draw attention to the plight of Bo Muller-Moore, a Vermont artist who is being pressured by Chick-Fil-A to stop selling his popular Eat More Kale t-shirts.
The project began when bent spoon, small world, and Whole Earth Center joined together to order Eat More Kale t-shirts for their staffs. That began discussions on ideas for promoting kale and led them to invite other local businesses to join in. The plan is to keep it loose and just have some fun.
