Green Curry

chicken in green curryIt tasted better than it looks.  Had a jar of Trader Joe’s Thai green curry sauce I’d been meaning to try.  A bag of frozen Japanese vegetables in the freezer, begging to be used – a poignant reminder of pre-nuclear meltdown days!  And good ol’ boneless, skinless chicken thighs.

While the sauce did not taste much like Thai food to me (I really must buy some good green curry paste), it was flavorful, and the results, given the minor time and effort involved, provided one work night dinner and two work day lunches.  I made a pot of my favorite brown Jasmine rice to go with this.
